On this occasion, we present you a fresh and fruity alternative to the classic cookies: lemon seeds. A perfect combination of flavors that will delight young and old alike.

How to prepare lemon seeds

Ingredients:

350 g of 0000 flour

1 tablespoon baking powder

1 teaspoon salt

2 eggs

75 g of butter

150g sugar

Zest of 1 lemon

For the filling:

100 g of butter

80 cc lemon juice

100g sugar

2 yolks

1 egg

Preparation:

In a container, mix the butter with the lemon zest and sugar until you obtain a homogeneous preparation. Add the eggs and then add the baking powder, flour and salt. Let the dough rest in the refrigerator for approximately 1 hour so that it takes consistency.

After the resting time, form buns of the desired size and flatten them slightly in the center with a finger to give them the characteristic shape of the seeds. Place them in a greased dish and put them in the freezer for a while so that they keep their shape when baking.

While you wait for them to cool, prepare the filling. Mix the yolks, egg and sugar in a bowl. Heat the lemon juice and add it to the previous preparation, stirring well to avoid lumps.

Bring the mixture to a simmer in a pot until it thickens. Once ready, transfer the cream to a bowl and add the butter and more lemon zest. Let it rest in the refrigerator with film in contact until it becomes consistent.

Preheat the oven to 180 degrees and cook the dough without filling for 10 minutes. Once baked, let them cool and then fill them with the prepared cream.
