Cook the toor dal and keep it aside. Check out my detailed post on how to cook toor dal using instant pot or pressure cooker.
– While the lentils are cooking, wash and remove the spinach leaves. Cut them roughly and keep aside.
– Heat the pan and when the oil is hot, add it. Add cumin, mustard and asafoetida in hot oil. Make sure you stay a little away as the seeds will explode.
Now add red and green chillies in the pan.
When they become light brown, add chopped spinach to the pan after a minute or two.
– Let the spinach leaves cook for 3 to 4 minutes.
– Add cooked and mashed lentils to these wilted spinach leaves.
Now add coriander powder, turmeric powder and salt. – Mix it well and let the spinach dal curry cook for 5 minutes.
When the spinach leaves are cooked well, turn off the flame and add lemon juice to the spinach dal.
