“When this substance enters your bloodstream, your body converts it into another form called quercetin glucuronide,” according to study co-author Andrew Waterhouse, a wine chemist and professor emeritus in the University of California’s Department of Viticulture and Enology. In this form, it blocks the metabolism of alcohol.”

In turn, the interaction of quercetin with alcohol leads to the accumulation of a toxin called acetaldehyde in the body.

“Acetaldehyde is an irritant and inflammatory substance. According to studies, acetaldehyde can cause flushing, headache and nausea.
