Material
1 cup canned coconut milk, can be light
1 cup water
½ cup chia seeds
¼ cup maple syrup
1 teaspoon vanilla
a pinch of sea salt
Optional: blackberries and coconut, for serving
Method
Mix the ingredients together in a medium-sized bowl. Wait for 5 minutes and mix again. By this time the pudding should start thickening. If this has not happened, wait another 5 minutes and mix again.
Cover the bowl and refrigerate for at least 2 hours or overnight.
Serve chia pudding topped with fresh berries and coconut.
