What you will need:

  • 3 eggs
  • 300 g of granulated sugar
  • 300 g semi-coarse flour
  • 2 spoons of cocoa
  • 1/2 teaspoon grated lemon peel
  • 1 baking powder
  • 80 g of melted butter + to wipe the mold
  • 2 tablespoons of chopped nuts
  • 300 g of grated apples
  • 2 tablespoons of raisins

Approach:

1. In a bowl, beat eggs with sugar until light foam. Gradually add flour mixed with cocoa, lemon peel and baking powder. Add the butter and beat everything together. Finally, mix the nuts, apples and raisins into the dough.

2. Pour the dough into a mold greased with butter, put it in the oven heated to 180 °C and bake for about 30 minutes. Test whether the cake is baked by inserting a skewer into the center of the dough. After pulling out, it should remain dry and free of crumbs.

TIP: After cooling, you can cut the cake horizontally, spread it with jam, join the two halves together again and decorate the top of the cake with whipped cream.

What you will need:

  • 1 package of puff pastry (rolled out)
  • 4 apples
  • 2 vanilla sugars
  • juice of 1 lemon

Approach:

1. Cut the apples in half, remove the cores and cut them into thin slices. Put them in a bowl, sprinkle with lemon, cover with boiling water and leave to stand.

2. Spread the puff pastry on the work surface and cut it into six strips along the long side. Dry the apples and stack the apple slices on top of each other so that the arcs extend over the dough. Sprinkle the apples with vanilla sugar and then roll each strip with the apples like a roll.

3. Put the roses in the holes in the muffin tin, which you can line with paper cups or just wipe with water. Put everything in the oven heated to 190 °C and bake for about 20-25 minutes.

TIP: You can use cinnamon instead of vanilla sugar. Peach or apricot marmalade diluted with a little hot water, which you spread over the strips of dough, is also excellent.
