It is always present on the menu of every Indian restaurant and even those who do not know much about Indian cuisine have probably heard about samosas. The traditional samosa that you will find in every corner of India is filled with spicy potatoes and nothing else.
Material
For Samosa Pastry
2 cups flour (sifted)
1 teaspoon salt
2 tbsp oil
cold water, for kneading
for filling
3 cups soaked moong dal (peeled)
2 tbsp oil
1 teaspoon cumin
⅛ teaspoon asafoetida
3 spoons garam masala
3 teaspoons chili powder
2 tbsp fennel, powder
2 teaspoon coriander powder
salt to taste
1½ teaspoon dry mango powder
Method
* Grind the pulses coarsely.
* Heat 2 tablespoons oil and add cumin and asafoetida.
* When they start spluttering, add the dal and the rest of the ingredients that make the filling.
* Fry the mixture on low flame until it is well roasted. Once cooked it will stop sticking to the pan.
* Remove the mixture from the flame and keep it to cool.
* Mix salt in flour and apply oil in it.
* Add water and knead a stiff dough and leave for 15 minutes.
* Shape the dough into a smooth ball and roll it into a thin round.
* Cut them in half.
* Take one half, wet the edges, and fold the straight edge to the center and join one half overlapping the other to form a cone.
*Press the overlapping portion, and fill the cone and press the edges together to seal.
* When you put samosas in it, the oil should be hot, then reduce the flame and let it cook till it turns brown.
