Life Style: Asian Chopped Salad is full of crunchy, savory goodness. It is a vibrant and healthy side dish with sweet and salty flavors. Homemade Asian salad dressing is quick to prepare and irresistible.
Material
3 cups white cabbage, thinly sliced
3 cups red cabbage, thinly sliced
1 medium red bell pepper, cut into thin strips
1 medium carrot, julienned
1 cup sugar snap peas, chopped
3 green onions, chopped
1 tbsp coriander, chopped
1 tbsp sesame seeds
1/2 cup cashews, roasted and chopped
1/2 cup crisp chow mein noodles, or wontons
For Asian Salad Dressing
4 tbsp sesame oil
4 tbsp rice vinegar
2 tbsp honey
2 tbsp lemon juice
2 teaspoons fresh ginger, peeled and grated
Add 1 tsp salt, or as per taste
Add 1/2 tsp ground black pepper, or as per taste
Method
Roast the cashews on a preheated pan until they turn golden brown. Let them cool completely. Cut them into small pieces.
Wash and prepare all the vegetables and keep them in a big bowl.
Sprinkle chopped coriander, sesame seeds, noodles and cashew nuts on the salad.
For Asian salad dressing, mix the ingredients together in a jar and shake well.
Before serving, pour dressing over salad and toss to combine. Season with salt and pepper to taste.
