Crispy chicken fillets in a ramen crust with sweet and sour chilli sauce

INGREDIENTS

Chicken

  • 4 chicken breasts
  • 1 cup (250 ml) rice flour
  • 2 beaten eggs
  • 3 x 85g packs of store-bought instant ramen
  • 1 tbsp (15 ml) canola oil

Thai chili sauce

  • 1 cup (250 ml) granulated sugar
  • ½ cup (60 ml) rice vinegar
  • 3 Thai chili peppers
  • 4 cloves garlic, finely chopped
  • 1 tsp (5 ml) fine salt
  • ½ cup (125 ml) water
  • 1 green onion chopped

Broccoli with sesame

  • 2 broccoli cut into bunches
  • 3 tbsp. tablespoon (45 ml) of sesame oil
  • 1 clove garlic, minced
  • 2 tbsp. tablespoon (30 ml) of chopped ginger
  • 3 tbsp. tablespoon (45 ml) of sesame seeds

Put in order

  • 1⁄2 cup (125 mL) homemade or store-bought kimchi
  • coriander leaves

PREPARATION

Step 1: Preheat air fryer to 375°F (190°C). Then cut the chicken breasts into strips (5-6 per breast).

2nd step: Place the flour in a bowl. In another beat the eggs and in a third crush the crunchy ramen (I recommend doing this using a food processor to obtain fine but still consistent crumbs). Then bread the strips of English chicken. (1. flour 2. eggs and 3. ramen). Place the breaded chicken strips in the air fryer and cook for 10 to 12 minutes.

Step 3: Meanwhile, in a saucepan, boil the vinegar and icing sugar for 1 minute so that they dissolve well. Then, in a mortar, pulverize the garlic cloves and chillies (2 seedless chillies and 1 with seeds) until no large pieces remain. Then add the sweet vinegar mixture and add the water. Cook for 7-8 minutes to reduce and thicken the sauce. Then cool and add sliced ​​green onions.

Step 4: For the broccoli, heat the sesame oil in a large pan and roast the florets until golden brown. Then add the garlic and ginger and a splash of water to create some steam. Top with sesame seeds and season with salt and pepper to taste. Serve in the center of the plate then cover the crispy chicken fillets with the sweet and sour sauce and serve on top of the broccoli. Decorate with a few coriander leaves and kimchi to taste.
