Publika.az Yuliya Budovskaya, technologist of “Putin’s” fish processing company, said this in an interview to Gazeta.ru.

Only salt is enough to preserve caviar, and the product must be stored and transported in frozen form. However, some manufacturers use additional preservatives. According to the expert, only sorbic acid and sodium benzoate are acceptable, and at the same time, they are approved by state and international standards. It is also possible to add food additives.

“In canned fish, preservatives are needed to avoid spoilage due to the development of yeast and mold fungi. Open corservi should be stored in the refrigerator, caviar can not be left for more than one or two days. Except for salt and spices, squid and octopus canned in their own juice should not contain any additional components. The same applies to the liver: enough bay leaves, salt and pepper,” said the expert.

Budovskaya also said that glass containers are not an indicator of product freshness as many people think.
