Rotterdam, Netherlands, March 26, 2024 (ots/PRNewswire) Unilever Foods Solutions presents “Future Menus 2024” eight global trends that will have a lasting impact on the gastronomy of the future. The most important changes expected in 2024 include the increasing demand for new taste experiences and plant-based dishes as well as the maximization of Resources to reduce food waste in the kitchen.1 In line with the “Future Menu Trends 2024”, Unilever Food Solutions provides a wide range of assistance, recipes and practical tips based on feedback from 250 culinary specialist advisors worldwide and from more than 1,600 cooking professionals in 21 countries were collected via UFS e-Panels. The aim of “Future Menus 2024” is to support restaurants around the world in meeting the changing needs of guests. To this end, the following eight trends were identified: “Flavour Shock”, “Low-Waste Menus”, “Plant Powered Protein”, “Irresistible Vegetables”, “Local Abundance”, “Modernised Comfort Food”, “The New Sharing” and “Feel-Good Food”.

Flavour Shock

Known for spending heavily on dining out and regularly making food decisions based on social media content, Generation Z is influencing eating habits around the world. The “Flavour Shock” trend highlighted in “Future Menus 2024” is characterized by special, surprising flavor combinations, and well-known rules are completely thrown overboard. For example, modern burgers, pasta or chicken are combined with authentic Mexican sauces such as salsa poblana made from roasted poblano chilies.

To support chefs in creating such new flavor combinations, the Culinary Advisory team demonstrates various key techniques. In addition to cooking methods such as smoking, curing and fermenting to combine different flavors and textures, products are used that enhance the flavors of a dish while reducing cooking times. Cooking aids such as the bouillons and seasonings from Knorr Professional are used for this purpose.

Low-Waste Menus

For 48% of Generation Z, the environmental friendliness and sustainability of a product or service are the most important criteria when making a purchase decision.3 There is also an increasing demand for “low-waste menus”.
