The German Society for Hospital Hygiene has warned of the danger of infection with enterohemorrhagic bacteria Escherichia coli (EHEC), as they produce substances that are toxic to humans.
The association explained that infection with the enterohemorrhagic bacterium Escherichia coli occurs through contact with ruminant animals, such as sheep and cows, consumption of contaminated food, contact with infected people and inadequate hygiene.
Escherichia coli bacteria, also known as large intestinal bacteria or E. coli, are a group of bacteria that live in the intestines of humans and help maintain the health of our intestines. But some types of bacteria can, at times, cause serious illness.
The types of Escherichia coli that cause serious infections produce a toxin known as “Shiga”.
Although E. coli bacteria can spread and infiltrate the body in several ways, about 85% of infections come from food. Meat becomes contaminated when bacteria spread into the intestines of animals during slaughter.
Watery or bloody diarrhea
Symptoms of enterohemorrhagic Escherichia coli infection include watery diarrhea, nausea, and abdominal cramps. In severe cases, the patient suffers from bloody diarrhea.
The association stressed the need to treat the infection in a timely manner to avoid the serious consequences that could result, including kidney failure and death in the worst cases.
The infection is diagnosed by examining blood, urine, and a stool sample, and treatment is with antibiotics, as well as providing the body with adequate fluids and electrolytes.
Electrolytes are minerals that circulate in the blood and are also found in stomach juice, feces, urine and body tissues.
To prevent enterohemorrhagic infection from Escherichia coli it is necessary to respect health regulations and hygiene standards, especially when handling food and in contact with ruminant animals.
