MEXICO CITY (apro).- The Federal Consumer Protection Agency (Profeco) published a study on the quality of chorizo “Pure Chorizo? Know what they sell you” in issue #568 of Consumer Magazine corresponding to the month of June 2024.
Chorizo is a sausage of Spanish origin that contains garlic, chili and oregano, vegetable ingredients, pork fat or vegetable fats, a mixture of chili peppers, water, vinegar, sugars and preservatives.
There is fresh and cured chorizo, it has a moist appearance and must be roasted or fried to be consumed; There is the ripening that is subjected to a drying process under controlled conditions of temperature and humidity and the smoking, in its drying process it was exposed to wood smoke.
In Mexico, chorizo made from pork, beef, chicken or turkey is sold, and there are also soy, mushrooms, beans and peas options.
The study was carried out on 49 brands; 13 matured chorizos, 32 fresh chorizos and 4 chorizos without meat ingredients and with soy, 420 tests were carried out during February 22 and April 10 of this year.
The amount of fat, carbohydrates, sodium, energy content and protein in 100 grams of product was verified, as well as the ingredients and net content marked on their labels.
The study confirmed that the products complied with the provisions of the standards:

Which establish that brands must comply with the labeling standard which establishes that the name must correspond to its common name, composition and the process to which it is subjected, the list of ingredients must be presented from highest to lowest proportion at the time of Product development.
Products that are named with an ingredient (soy, turkey, among others) and highlight it must indicate the percentage, products that exceed the sodium, calorie and saturated fat content established by the labeling standard must display the corresponding warning seals. .
