Although the Šumava nature is harsh, it is also very beautiful and rich in many raw materials. And it was the thick soups that were and are still being cooked here that were meant to warm you up and give you energy after working in the woods and fields. When homemade pastries were added to them, they were the basis of the daily diet. We have a few recipes for you that are worth trying.

Lumberjack potatoes with sausage
Lumberjack potatoes with sausage

What you will need:
- 2 tablespoons of butter
- 1/2 onion
- 5 potatoes
- 1 carrot
- 1 parsley
- 1 clove of garlic
- 2 spicy sausages
- 1 bay leaf
- 1 handful of chopped fresh chives
- salt
Approach:
1. Saute finely chopped onion in butter. Add chopped carrots and parsley and diced potatoes. Sauté for a while, add a bay leaf and cover with a liter and a half of boiling water. Add salt and cook for a while.
2. Add sausages cut into rounds, a pressed clove of garlic and about a handful of chopped libečka to the soup. Mix and let it bubble on a low flame for about 5 minutes.
3. Season the soup with salt as needed and serve with bread.
Pea soup with cruciferous vegetables

What you will need:
- 300 g of dry green peas
- 3 tablespoons lard
- 1 onion
- 3 cloves of garlic
- 1 liter of meat broth
- 1 teaspoon marjoram
- grated nutmeg
- 200 ml whole milk or 12% cream
- 100 g apple and pear hybrid
- grinded pepper
- salt
Approach:
1. Rinse the peas under running water, pour them into a large pot, cover with clean water and cook slowly until they are really soft. Then we add a teaspoon and a half of salt to it and let it stand for a while, even overnight, it will be much softer and tastier.
2. Heat lard in another pot and fry finely chopped onion and chopped garlic in it. Add peas, cover with broth, stir, bring to a boil and let cook slowly for a few minutes.
3. Season the soup with pepper, marjoram and nutmeg and blend it with a stick blender. Soften it with milk or cream, or pea decoction if it is too thick, and add salt.
4. Put steamed and cut into wider noodles into the finished soup.

Cumin from Malče

What you will need:
- 2 tablespoons of butter
- 1 tablespoon plain flour
- 2 teaspoons cumin
- 2 carrots
- 1/2 celery
- 1 parsley
- 1 egg
- grinded pepper
- salt
- chopped green parsley
Approach:
1. Make a roux from butter and plain flour. Add cumin and let it smell. Cover everything with cold water or vegetable broth, mix well, add salt, add cleaned, grated vegetables and cook until soft.
2. Before the end, add an egg to the soup and season it with pepper and green parsley. Served with pastry.
Kyselka from Horská Kvilda

What you will need:
- 1 handful of small groats
- 1 liter of water
- 250 ml sour milk
- 1 egg
- salt
- caraway seeds
Approach:
1. Put the semolina in a pot, cover it with water, add salt, cumin and cook for about half an hour.
2. Pour sour milk into the soup, break the egg into it, and season it with salt if necessary and serve.
With some of the soups, you can also bake good bread, which is made in Šumava:
Pancake bread
What you will need:
- 330 ml of lukewarm milk
- 2 teaspoons of dry yeast
- 1 teaspoon of granulated sugar
- 375 g plain flour
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- sea salt for sprinkling
Approach:
1. Mix lukewarm milk, yeast and sugar in a bowl and let the yeast rise in a warm place.
2. Make a smooth dough from flour, salt, oil and yeast in a mixing bowl, work it well and leave it to rise in a warm place until it doubles in size (it should take about 30 minutes). Meanwhile, heat the oven to 180°C.
3. Work the risen dough, make it into a roughly centimeter-thick pancake, which we place on a baking sheet lined with baking paper. Brush it with oil, sprinkle with salt, put in the oven and bake for about 15 to 20 minutes until golden.
