Strawberries are very delicate fruits that do not last very long fresh (especially if the weather is rainy during ripening and harvesting). Therefore, try to use them as soon as possible, undamaged fruits will last for a maximum of 3 days in the refrigerator. Here are some helpful hints:

Fortunately, strawberries can be frozen very well. After washing, remove the leaves from them, spread them on a tray and put them in the freezer for 2-3 hours to harden. Then pour them into microtene bags or boxes, close them well and put them in the freezer. This way you can have them in stock for 10 to 12 months. Strawberry pulp or puree can be frozen just as well. When defrosting strawberries, do not try to speed everything up with a microwave oven, unless of course we want to prepare hot strawberries for, for example, an ice cream sundae. In order for the strawberries to keep their nice shape even after defrosting, pour them into a bowl or tray and let them thaw slowly in the refrigerator (it takes several hours). Then you can use them in exactly the same way as fresh.

If you have a lot of ripe and sweet strawberries that you don’t eat, it is best to preserve them (in addition to freezing them). Making homemade strawberry jam is not difficult at all. Basically you are all you need is strawberries, sugar and a little lemon juice. If you do not need the jam to be very sweet, you will need 500 g of sugar per 1 kg of strawberries. Strawberries don’t contain much pectin, that’s why some also add a gelling agent. Our grandmothers made do with adding other fruits that contain a lot of pectin to the jam (for example, apples), or cooking the jam for a longer time and still stirring it and collecting the foam that forms on the surface until it was thick enough.
