Material
2 cups cooked jasmine rice, preferably cold
1 cup fresh pineapple chunks
1/2 cup chopped firm tofu or tempeh
1/2 cup chopped vegetables (capsicum, carrot, peas and corn)
2 cloves garlic, finely chopped
2 tbsp soy sauce
1 tbsp vegetarian oyster sauce
1 teaspoon curry powder
1/2 teaspoon turmeric powder
2 green onions, chopped
Handful of fresh coriander, chopped
1/4 cup roasted cashews or peanuts (optional, for garnish)
cooking oil for frying
Method
Cook the jasmine rice according to package directions and let cool. For best results, use cold rice to prevent it from becoming mushy during frying.
– Cut tofu or tempeh into small pieces. Prepare the vegetables by cutting them into small, uniform pieces. Apart from this, also cut fresh pineapple into pieces.
– Heat some oil in a large pan or wok over medium-high heat.
– Add the minced garlic and sauté until fragrant, about 1-2 minutes.
– Add chopped tofu or tempeh to the pan. Fry it while stirring until it becomes golden and slightly crisp. Remove from the pan and keep aside.
– Add chopped vegetables to the pan. Keep stirring for a few minutes until they start to soften but are still slightly crunchy.
– Add fresh pineapple pieces and fry while stirring for 1-2 minutes, so that the pineapple becomes slightly caramelized.
– Place cooked tofu or tempeh, vegetables and pineapple on one side of the pan. Add a little more oil if necessary.
– Pour the cooled cooked rice into the empty part of the pan. Break up any clumps and mix well with the rest of the ingredients.
– Sprinkle soy sauce, vegetarian oyster sauce, curry powder and turmeric powder over the rice. Stir everything together until well mixed.
– Taste the fried rice and adjust the seasoning if necessary.
– Add chopped green onion and fresh coriander in the pan. Give it a final stir to incorporate the flavors.
– If desired, garnish with roasted cashews or peanuts for crunch and taste.
– Transfer the vegan pineapple fried rice to a serving dish.
– Serve hot garnished with extra cilantro and a slice of fresh pineapple on the side for an extra tropical touch.
