Material
1/2 cup rolled oats
1/4 cup jaggery (as per taste)
2 cups milk (you can use dairy or plant-based milk)
1/4 cup grated coconut
1/4 cup chopped nuts (cashews, almonds and pistachios)
1/2 teaspoon cardamom powder
A pinch of saffron threads (optional)
1 tbsp ghee (clarified butter)
some raisins for decoration

Method
– First of all, dry roast the oats in a pan on medium flame. Keep stirring continuously to prevent burning. Fry the oats until they turn golden brown and have a nutty aroma.
– Add two cups of milk to roasted oats and mix well. Let it boil on low flame until the oats are cooked and the mixture becomes thick. Keep stirring occasionally to prevent lumps from forming.
When the oats are cooked and the mixture becomes thick, add grated jaggery to it. Adjust the amount of jaggery as per your sweetness preference. Stir it until the jaggery dissolves completely in the mixture.
– Sprinkle cardamom powder in payasam for pleasant aroma and taste. Mix it well.
– Add grated coconut to the mixture and stir until mixed well. Coconut adds a beautiful texture and flavor to the payasam.
