Life Style: Scalloped Potatoes are a classic, delicious side dish. Drizzle the creamy sauce over thinly sliced potatoes, then bake until golden brown. It is rich, cheesy and extremely tasty.
Material
2 pounds russet potatoes, peeled and thinly sliced
2 tablespoons butter, cut into small pieces
1/3 cup shredded mozzarella cheese
1/3 cup shredded Asiago cheese
1/3 cup grated Gruyere cheese
1/4 cup freshly grated Parmesan cheese
1 large onion, finely chopped
1 teaspoon chopped fresh parsley leaves
1 teaspoon salt
1/2 teaspoon black pepper
2 cups heavy cream
1/4 teaspoon grated nutmeg
Method
* Place a rack in the upper third of your oven and preheat to 425 degrees Fahrenheit.
*In a small bowl, combine chopped onion, chopped parsley, salt and pepper. Stir it and keep aside.
*In another bowl, combine the shredded mozzarella, Asiago and Gruyère cheeses and mix together.
* Melt half the butter in a large oven-safe skillet over medium-high heat. Spread half the potato pieces and add.
* Sprinkle 2/3 of the onion mixture over the potatoes and then sprinkle half of the three cheese mixtures.
*Place the remaining potato slices on top and sprinkle with the remaining onion mixture. Pour cream on top and add nutmeg.
* Boil on the stove for 5 minutes.
* Sprinkle remaining butter pieces on potatoes. Then sprinkle with the remaining three cheese mixture and top with Parmesan cheese.
*Put the pan in the oven and bake until golden, about 25-30 minutes. Let rest for 5 minutes before serving and garnish with a sprig of thyme.
