Material
250 grams cheese
2 large tomatoes (slightly sour)
1 tbsp ginger (adrak)
2 tbsp oil/ghee
1/2 tsp cumin
1 tsp dried coriander (whole coriander seeds)
1 teaspoon black pepper corn
1/4 tsp fenugreek seeds
1/2 tsp red chilli powder
1/2 tsp Kashmiri red chilli powder (for colour)
1 teaspoon sugar
1/4 cup whipped cream
salt to taste
1 tbsp green coriander
Method
* Dry roast together cumin seeds, coriander seeds, black pepper and fenugreek seeds on low flame.
* Grind tomato, green chilli and ginger together and make a fine puree.
* Heat oil in a pan, add Kashmiri red chilli powder, stir once and immediately add tomato puree and fry until it thickens and oil starts separating.
* Now add roasted masala, salt and red chilli powder. Also 1/2 teaspoon sugar. If the tomatoes are not sour then do not use sugar.
Cook for 2-3 minutes. Then add whipped cream. Let it cook for 5 minutes.
* When it is fried well and the oil starts separating, add 1/4 cup hot water to it.
* Let the curry boil. Once the curry reaches the desired consistency, add chopped paneer pieces. Do not cook the paneer for too long, otherwise the paneer will become chewy and hard.
* Switch off the flame within 5 minutes.
* Sprinkle chopped coriander.
* Your fast paneer is ready.
