Making Egg Noodles Simple and Healthy, Recipes

Life Style: Egg noodles are a delicious anytime fast food made by combining cooked noodles with eggs, sauce and spices. The presented egg noodles is an Indian makeover of the Chinese dish which is quite simple and quick to make at home.
I love to eat egg noodles when we are busy or in lazy times due to its ease and deliciousness. Egg noodles recipe is one of the good menu options for beginners and bachelors.
Material
150 grams hakka noodles
3 eggs
1/4 cup onion
1/2 cup carrot
1/2 cup capsicum
3/4 cup cabbage
1 teaspoon soy sauce
1 teaspoon vinegar
1/2 tsp red chilli sauce
1/2 tsp green chilli chutney
1 tsp black pepper powder + as required
2 tbsp oil + as required
2 teaspoon garlic
1 teaspoon green onion
1 tbsp green onion
salt to taste
Method
– Add salt and oil to 4 cups of water and boil.
– Add 150 grams Hakka noodles. I broke it in half and added it.
Cook the noodles until slightly soft but not mushy.
– It should be al dente – just cooked. I cooked for 5 minutes and it was perfect. But follow the pack instructions for cooking time.
– drain water. Rinse with cold water to remove excess starch and prevent further cooking.
– Add a little oil to prevent sticking, toss and keep aside.
– Scuffle well. Take out in a plate and keep aside.
– Heat oil in a pan – add 3 eggs along with salt and pepper.
– In a big pan – first add 2 teaspoons finely chopped garlic and 1 teaspoon white part of green onion. Fry for 2 minutes.
– Add 1/4 chopped onion, 1/2 cup carrot, 1/2 cup capsicum, 3/4 cup cabbage.
– Fry on medium high flame for 2 minutes – make sure the vegetables should be crisp.
– Keep the flame on high – Add 1 tsp soya sauce, 1/2 tsp green chilli sauce, 1/2 tsp red chilli sauce, 1/2 tsp black pepper, 1 tsp vinegar and salt as required. If you want, you can also add 1/2 teaspoon sugar.
– Toss quickly so that the vegetables are covered with the sauce, this should be done on high flame so toss quickly.
– Finally add 1 tablespoon green onion greens along with the cooked noodles.
– Mix it well. It was very easy to mix using 2 ladles.
– Toss it well on high flame. If you are able to carry the pan then toss it well to get a light smoky taste like in the restaurant. But be careful if the pan is heavy you will have a hard time, yes experience speaks.
Now add fried eggs into it.
– Toss well. Egg noodles ready!
