100 grams makhana/lotus seeds
1 tbsp ghee
200 grams paneer/fresh cheese
1 liter milk
3-4 tbsp sugar
4-5 green cardamoms crushed
2 tbsp chopped almonds
2 tbsp raisins
pistachio

Method

The process of making Makhana Kheer starts with roasting the lotus seeds/makhana.
– First of all heat a pan and add 1 tablespoon ghee in it. After this, add 100 grams of lotus seeds or makhana in the pan.
Fry the makhana for 3-4 minutes. When the lotus seeds are roasted well, turn off the flame.
Now carefully blend the makhana in a blender and make a thick paste.

– In a separate plate, grate 200 grams of fresh cheese/cottage cheese.
– Heat about one liter milk in a big pan and let it cook on low flame.
When the milk boils, add crushed makhana in the pan. – Cook it for 4-5 minutes until the milk starts thickening.
– When the milk starts thickening, it is time to add grated cheese to it. – Add grated cheese to the kheer and cook on low flame for 10-12 minutes.
-Keep stirring while making kheer.
– Add 3-4 tablespoons of sugar and 4-5 crushed green cardamoms to the Classic Makhana and Paneer Pudding midway through the cooking process.
Now add 2 tablespoons chopped almonds, 2 tablespoons raisins and some beautiful threads of saffron. (It would be better if you add Iranian saffron as it gives great taste to the kheer)
– Chill the kheer in the refrigerator and sprinkle some chopped almonds, pistachios and saffron over it when you are going to decorate it and share it with your friends and family.
