Cooking for the Christmas holidays, family celebrations or weddings means using a lot of eggs. Egg yolks and egg whites are not always part of the recipe, it often happens that egg whites remain unused in the refrigerator. You can put them together with scrambled eggs, but we can recommend a better way.
Egg whites for frosting
The icing for gingerbread or some cakes consists only of egg whites whipped with sugar and lemon juice. But to decorate gingerbread cookies you only need one egg white. What to do with other egg whites, for example, when we were preparing a real egg liqueur, which includes exactly 10 yolks? Bake soft biscuits only with egg whites.
Crispy meringues made with egg whites
Traditional meringues are beautiful and many people avoid them when baking for fear that they won’t take care of the cooking time. Egg whites burn easily and meringues end up in the garbage.
How to prepare meringues correctly? Mix 3 egg whites with 220 grams of granulated sugar. The egg whites and sugars must be steamed, that is, the bowl must not touch the level of the water in the pan, which we will bring to the boil. Gradually pour the sugar into the egg whites. The mass must be warm, it must not be hot, so that the egg does not start to curdle. First beat on low speed, then increase the speed and beat the snow with the sugar. We line the baking tray with baking paper, place the egg white in a piping bag and squeeze the decorative mounds onto the tray. Meringues are not baked, but slowly dried.

How to cook meringues correctly
Preheat the oven to 100°C and use the hot air programme. Before the oven heats up, sprinkle the pan with meringue. Play with the shapes, you can add a little food coloring to the whipped snow. Dry the meringues in the oven for an hour or an hour and a half, depending on the size of the meringues. Initially do not open the oven, after 30-45 minutes open it several times to let the steam out and prevent the meringues from breaking. Remember that meringues should not be stored in the refrigerator. They are intended for consumption or decoration of other desserts.
Other uses for leftover egg whites
- Homemade face mask.
- Egg omelette made only with egg whites.
- Mix with grated cheese, garlic and fry in oil in the form of meatballs.
- Place the egg whites into silicone molds and freeze them.
