Publika.az reports that this study of “Edith Cowan” University was published in “European Journal of Epidemiology”.

Research has shown that eating nitrate-rich vegetables such as green leafy vegetables and beets does not cause concern about cancer risk.

In contrast, consumption of animal nitrates increases the risk of all-cause and CVD mortality by 9% and 12%, respectively. Higher intakes of nitrite, a compound derived from nitrate, increased the risk of all-cause mortality, CVD, and cancer by 25%, 29%, and 18%, respectively.

At the same time, higher intake of nitrates and nitrites from processed meat products increases the risk of all-cause mortality and cancer by 12-22%.

When nitrate enters the body, it can take two different routes. One is the production of a compound called nitric oxide, which has been shown to improve blood flow, lower blood pressure and support overall cardiovascular health. But nitrate can take the second route by forming a group of compounds called nitrosamines, which are considered carcinogens and have been linked to cancer.

So eat more plants and less animal products and limit the amount of processed meats.

“Most thoughts about nitrate intake revolve around cancer concerns. But one of the most interesting findings of this study is that nitrates found in drinking water are more associated with death from cardiovascular disease. Nitrates from plants and vegetables protect against various types of death. However, when nitrates come from animal sources or water taps, they increase the risk of heart diseases, but also some types of cancer,” the scientists stressed.
