Hornado, “candy” consumed—frequently—at carnival time.

The carnival unites families and friends to play with water, powder and foam, without leaving aside the gastronomic aspect, where traditionally the pork hornado is prepared for this festival.

In some sectors of the city of Loja, entrepreneurs announce the preparation of this dish. One of them is Josefina Hernández, who is shy when speaking, but a master when it comes to preparing this food, a lesson that her parents left her.

He related that pork hornado is traditional during this time of carnival—it is the time when it is sold the most. He believes that food helps people be more active, so each baked dish contains meat, potatoes, mote, rice, salad and the inevitable chili; the latter, one of the most requested during carnival times.

“It is a meal that the whole family can eat, from the smallest to the adult; Its exquisite flavor makes you repeat it,” he stated.

Preparation

Doña Josefina Hernández mentioned that the process of baking a pig is complex and requires experience. Before tasting, two days of preparation are required. “On the day of sale, you have to wait around five hours for it to bake, then remove it from the oven and accompany it with other foods — so that people can enjoy it.”
