During the month of Ramadan, the people of Kashmir enjoy several dishes, one of which is the sweet milk desert locally known as Farin.
This flavor and ingredients make it very special. In this desert, milk is cooked on high heat for hours to increase its consistency and later added malkme.
Apart from this, grains of wheat, dry fruits and raisins are garnished on top.
Phirni, locally known as ‘Phiran’ in the Kashmir Valley, is a popular and delicious whole wheat pudding.
It is eaten in various regions including Kashmir especially during special occasions and festivals like Ramadan. Many people make and sell farin throughout the month of Ramadan.
Mirajuddin Saudagar, who sells farin only in Ramadan, says that he has been selling farin on a handcart at the same place for the past 50 years.

‘We have been selling this fern at the same place in Nawakadal Chowk for the last 50 years. Earlier we used to sell it in clay pots, then time changed and we started selling it in ceramic pots and now we sell it in plastic and paper boxes.’
Miraj starts his day at six in the morning and by four o’clock he prepares about 150 boxes of farin. Then they decorate their car and sell it till evening.
Ferrin contains milk, semolina, condensed milk and sugar. A small box of Fern sells for Rs 30 and a big box sells for Rs 200. We start selling from five o’clock after Asr prayer. We have maintained the same flavor for the last 50 years which makes it a favorite among locals.’
Meraj says that this is his legacy which he will carry forward and he has built a reputation among the people.
“People buy from us and take it home to enjoy this delicacy with their families,” he said. Fern is cold in nature and quenches the thirst of the fasting person.’
