Life Style: Easy and delicious Gujarati Kadhi made with dahi (curd), gram flour (chickpea flour) and spices which can be served with rice, roti or khichdi. It is made with a few simple ingredients and is very tasty. It’s very comforting and tastes great as a soup.
Material
2 cups curd
¼ cup gram flour (gram flour/chickpea flour)
½ inch grated ginger
1-2 green chillies finely chopped (or as per taste)
½ tsp turmeric powder
1 teaspoon sugar
¾-1 teaspoon salt (adjust to taste)
3 cups water
2 tbsp coriander
for tempering
1 tbsp ghee
1 teaspoon mustard seeds
½ tsp cumin
1-2 dry red chillies
1 inch cinnamon
4-5 cloves
8-10 curry leaves
½ teaspoon asafoetida

Making Kadhi:
– Blend curd and gram flour together for a few seconds. Alternatively, beat them well and ensure that there are no lumps left.
– Pour the curd-gram flour mixture in the pan and add ginger, green chilli, turmeric, salt and sugar to it.
– Mix everything well.
– Add water and mix well. At this stage the mixture will be quite thin and runny.
– Keep on medium flame and let it boil.
Once it starts boiling, reduce the flame and let it boil for 8-10 minutes on low flame. Keep stirring in between.
Prepare tadka (masala/tadka):
– Heat ghee in a small pan and add mustard seeds in it.
When it starts spluttering, add cumin, dry red chilli, cinnamon, cloves, curry leaves and asafoetida. Turn off the flame.
Finish the curry:
– Add the prepared tempering to the curry and mix well. Cook on low flame for 1-2 minutes.
– Switch off the flame and add green coriander.
– Serve with boiled rice.
