Moss cake is literally the welcome of spring. The light mascarpone cream in combination with the fluffy body of deep green color will also be enjoyed by children. And this despite the fact that there is “hidden” spinach in it, which children often do not need at all. You can’t tell by the taste. A moss cake decorated with shredded remains of the corpus and fresh fruit is beautiful.

Easter chocolate cheesecake

Raw materials:

Body:

  • 140 g butter graham crackers
  • 30 g of granulated sugar
  • 10 g of cocoa
  • 70 g of butter

Filling:

  • 600 g of cream cheese (Philadephia, can also be Lučina)
  • 150 g of granulated sugar
  • 3 eggs
  • 80 ml of whipping cream
  • 1 teaspoon of vanilla extract
  • 80 g of cooking chocolate

Chocolate topping:

  • 60 g of cooking chocolate
  • 10 g of butter
  • 10 g of granulated sugar

Approach:

1. We prepare all the listed ingredients one to two hours before baking so that they reach room temperature. Crush the cookies and pour them into a bowl. Add sugar, cocoa, melted butter and mix well.

2. Line the bottom of the cake pan with baking paper, fill it with the mixture, press it down well – you can use a glass with a flat bottom to help. We press out a small low border on the sides. Then bake the carcass prepared in this way for about 15 minutes in an oven heated to 175 °C.

3. First beat the cheese for the filling with a whisk, only then mix in the sugar, beat again, add eggs, beat, pour in the whipped cream, beat, vanilla essence and warmed cooking chocolate and beat for the last time.

4. Pour this mixture onto the pre-baked body, smooth and bake for 15 minutes at 175°C. Then reduce the temperature to 140 °C and bake for another hour.

5. As soon as we take the cheesecake out of the oven, run a knife around the edge and let it cool.

6. Heat all the ingredients for the glaze in a water bath and mix well. Spread the frosting on the cooled cheesecake and leave it to cool and harden (preferably by the next day) in the fridge. Before serving, decorate it with mini chocolate eggs.
