What you will need:

  • 500 g cherries (pitted)
  • 125 g of butter
  • 300 g semi-coarse flour
  • 200 g caster sugar + for sprinkling
  • 1 vanilla sugar
  • 1 bag of baking powder
  • 500 g ricotty
  • 3 eggs
  • a handful of almond slices

Approach:

1. Preheat the oven to 175°C. Line the bottom of a round springform cake tin with baking paper.

2. Heat the butter and let it cool. In a bowl, mix the flour with the icing sugar, vanilla sugar and baking powder. In another bowl, beat the ricotta and then beat in the eggs one at a time. Gradually mix in the flour mixture and finally mix in the butter.

3. Pour the dough into the prepared form, smooth the surface and sprinkle evenly with pitted cherries and then almond slices.

3. Put the cake in the oven and bake for 40-50 minutes. Test whether the cake is baked by inserting a toothpick into its center. After pulling out, it must remain dry and free of crumbs.

4. Leave the baked cake to cool and then sugar it.

TIP: You can replace ricotta with soft cottage cheese mixed with grass or thick white yogurt in a 1:1 ratio.

What you will need:

  • 200 g plain flour
  • 100 g of sugar
  • 2 teaspoons of baking powder
  • pinch of salt
  • 1 egg
  • 100 ml of milk
  • 100 ml of vegetable oil
  • 200 g fresh cherries (pitted and cut into pieces)
  • 1 teaspoon of vanilla extract

Approach:

1. Preheat the oven to 180 °C and line the muffin tin with paper cups.

2. Mix the flour, sugar, baking powder and salt in a bowl. In another bowl, beat the eggs with milk, oil and vanilla extract. Gradually mix in the loose mixture until a smooth dough is formed. Finally, add the chopped cherries and mix gently.

3. Divide the batter into muffin cups, place in the oven and bake for 20-25 minutes, until the muffins are golden and have risen.

4. Leave the baked muffins to cool on a wire rack. You can sweeten them to taste before serving.

What you will need:

  • 500 g cherries (pitted)
  • 100 g plain flour
  • 100 g butter (cold)
  • 50 g cane sugar
  • 50 g of oatmeal
  • pinch of salt
  • 1 teaspoon of ground cinnamon

Approach:

1. Preheat the oven to 190 °C. Spread the cherries on the bottom of the baking dish.

2. Mix the flour, cane sugar, oatmeal, salt and cinnamon in a bowl. Add the cold cubed butter and mix by hand or with a mixer until the mixture resembles a crumb.

3. Sprinkle the crumble evenly over the cherries in the baking dish, place everything in the hot oven and bake for 25-30 minutes until the surface is golden and crispy.

4. Serve the crumble warm, preferably with a scoop of vanilla ice cream.
