What to do to prevent your meatballs from bursting?

♥ Thoroughly mix the meat mixture, in which the whole egg should not be missing, but work fastso that the meat does not get too hot and the fat does not start to melt in it.
♥ Our grandmothers used to say that you have to beat the meatloaf first. Before making a donut from the meat mixture, slap it back into the bowl from a height of at least 30 cm. Don’t be afraid of that and hit her several times in a row. Thanks to this, you will push air bubbles out of the meat, which could cause mischief during baking.
♥ Shape the meat cone with your hands dipped in cold water, and before placing it in the heated oven, cover it with water. This will cause the surface of the meat to contract.

You will need:
- 100 ml of milk
- 3 slices of toasted bread
- 500 g of ground beef
- 500 g of minced pork
- 1 tablespoon of mustard
- 1 egg
- 4 cloves of garlic
- 5 onions
- oil
- grinded pepper
- salt
Approach:
1. Pour the milk into a bowl and add the torn pieces of toasted bread. Put both types of meat in a large bowl, add salt, pepper, mustard, eggs, crushed garlic cloves, one chopped onion and soaked toasted bread.
2. Mix everything thoroughly and let the mixture rest for a while. Then form a meatball from the meat mixture and brush it with oil.
3. Peel the remaining onions, cut them into quarters and spread them in an oiled baking dish. Add the meatloaf, cover with a little water and bake for about an hour in an oven preheated to 180°C.
Meatloaf with bacon
You will need:
- 2 rolls
- 150 ml of cream
- 500 g of ground beef
- 500 g of minced pork
- 2 tablespoons of sterilized corn
- 100 g of sterilized peas
- 1 boiled carrot
- 2 sprigs of thyme
- 2 tablespoons of chopped parsley
- 1 egg
- 1 onion
- 150 g slices of English bacon
- oil
- grinded pepper
- salt
Approach:
1. Tear the rolls into pieces, place in a bowl and cover with cream. Put the meat in a large bowl, add the corn, peas, carrots cut into pieces, thyme and parsley. Then add eggs, soaked rolls and finely chopped onion. Mix everything thoroughly and let the mixture rest for a while.
2. Grease the loaf tin with oil and fill it with the meat mixture. Top with bacon slices.
3. Put the meatloaf in an oven preheated to 180 °C and bake for about an hour.

Meatloaf with nuts
You will need:
- 2 rolls
- 150 ml of milk
- 1 onion
- 50 g of bacon
- 400 g of pork
- 400 g of beef
- 1 cup ground nuts
- 100 g of smoked edamame
- 1 egg
- 1 tablespoon of mustard
- oil
- grinded pepper
- salt
Approach:
1. Tear the rolls into pieces and cover them with milk. Fry diced onion and bacon in oil in a pan.
2. Put the meat in a bowl, add ground nuts, soaked rolls and grated cheese. Stir in the mixture from the pan, add the egg, mustard, salt and pepper. Work everything through thoroughly.
3. Form a meatloaf from the mass and place it in an oiled baking dish. Bake for about an hour in an oven heated to 180 °C.
TIP: You can decorate the meatloaf with caramelized onions. Fry the onion cut into rounds in butter, sprinkle it with a little sugar and let it caramelize.
Meatloaf with vegetables
You will need:
- 1 kg ground chicken thigh fillets
- 1 egg
- 1 egg yolk
- 4 tablespoons of breadcrumbs
- 150 g of bacon
- 200 g of root vegetables
- 1 onion
- 100 g goudy
- 1 tablespoon of chopped parsley
- 1 teaspoon ground turmeric
- oil
- grinded pepper
- salt
Approach:
1. Put the minced meat in a bowl, mix with egg, yolk, breadcrumbs, chopped bacon, grated vegetables, finely chopped onion, grated cheese and parsley. Season the mixture with salt, pepper and turmeric. Mix thoroughly and let the finished mixture rest for a while.
2. Form a donut from the meat mixture, put it in an oiled baking dish and bake in an oven heated to 180 °C for about 50 minutes to an hour.
TIP: If you grind the meat yourself, salt it before grinding. The flavors will come together much better.

Meatloaf with mushrooms
You will need:
- 500 g of fresh mushrooms
- 1 onion
- 1 sprig of rosemary
- 2 cloves of garlic
- 500 g of minced pork
- 1 egg
- 5 tablespoons of oatmeal
- 1 tablespoon of mustard
- oil
- grinded pepper
- salt
Approach:
1. Clean and roughly chop the champignons. Fry the chopped onion in oil in a pan, add the chopped mushrooms and fry them briefly. Add the rosemary and chopped garlic, let it become fragrant, add salt and remove from the heat.
2. In a bowl, mix the minced meat with the egg, flakes, mustard, salt and pepper. Spread the meat mixture into a rectangle on baking paper and place the prepared mushrooms in the center. Using paper, roll the meat and filling into a roll and carefully transfer it to a suitable baking paper-lined form. Brush the surface with water and bake the meatloaf for about an hour in an oven heated to 180 °C.
